Totally cool looking and a keeper
The Pros: Julia Child said that one of the hardest things to cook is a roast chicken. She didn't have the Staub vertical roaster. Before buying, I read a lot of reviews and heard nothing but accolades. It doesn't disappoint. Took a bit of experimenting (the first few chickens were dark brown/ black on the outside, raw on the inside), but I finally got it right. Now, I throw some potatoes wedges on the bottom, impale the chicken on the spike, and allow the potatoes to baste in the chicken juices, turning them once in a while. This yields perfect roast potatoes, a perfect chicken and a perfectly cooked meal, not to mention that it makes a dramatic presentation. The Cons: 1) I had a few near mishaps because I failed to realize this is a VERTICAL roaster. When I tried to slide the chicken into the oven, it wouldn't fit--I had to remove and readjust the racks to allow for sufficient headroom. It's been close, but so far the chickens fit (without surgical intervention) albeit with very little clearance at the top which may explain the over-browning. I now shop with standing head-room in mind, but clearance--depending on your oven--may be an issue; 2) I bought the roaster in the matte black and the clean-up isn't quite as effortless as others have indicated. This may be function of the finish, matte v. enamel, as the interior of the matte is somewhat rough. While admittedly it's not a lot of scrubbing, it's also not a sponge bath; 3) The base is somewhat narrow relative to the diameter of the chicken, and while it's broad enough to cradle the bottom, I've found it's best to put the vertical roaster inside a larger roasting pan to catch any spills, splashes or errant potatoes (there's not a lot of room between the edge of the roaster and the chicken so getting access to the juices can be a little tricky). While a second pan does seem a little extreme, it definitely helps to prevent a bigger clean-up.Bottom line, it's a keeper. It's not your typical roasting pan. It performs admirably and it looks pretty cool too.

So worth the price for healthier and tastier eating!
Okay, this is expensive...in a way. However, if you love really good freshly roasted chicken...this is so easy! First of all if you like chicken on salads or in soups/stew/chili/casseroles...don't spend money on a store bought rotisserie chicken as you are probably getting a chicken injected with all sorts of stuff that is not good for you and with this roaster you control the chicken quality, size, etc. We buy the organic whole chickens from Costco in the 2-fer packs; each weighs in at about 3.5 pounds and is perfect for a small family dinner or for a weeks worth of various other recipes. This roaster will not fall apart like the ceramic variety and is super easy to clean. Simply roast the chicken for approximately 1 hours with a lemon and some herbs in the cavity and some olive oil and salt/pepper liberally applied and voila...perfect chicken roasted to the perfect temperature with moist and tender meat. This roaster pays for itself, honestly, it does!

Another Nice Staub Addition
Very nice, easy to clean (for real). All around another great Staub product, Produces a VERY juicy chicken. It came out of the oven with crispy skin but by the time it had rested 5+ minutes the skin was soft from the juiciness of the chicken. The only 2 downside are that its pretty small, I couldn't quite fit enough fingerling potatoes for two in with the chicken. The other downside is browning, only the top half of the chicken browns by the time its done cooking, I end up turning the chicken 3/4 the way into the cooking time but its a hassle when trying to maneuver a 350 degree chicken with utensils and your hands.Heat proof washable gloves are very helpful in this. Worth the $79.99 Price tag, its Staub and will last a long time.

Better than expected
I ordered this partly based on the other terrific reviews and I am not disappointed. The chicken we made the day this arrived was very juicy and tender (and we did not take the time to brine it first) with excellent texture. No more pre-made grocery store chickens for us. This was far better and almost as easy. Some of the basting juices seemed to burn onto the pan but wiped right off during cleanup. I used the recipe on the Staub website. They did not mention to preheat the pan in the recipe, but I did preheat the pan and I think that this helps the inside of the chicken cook faster. I know my family will use this on a regular basis and I would recommend it to anyone who likes roasted chicken.

Awesome.
Love it. BBQ chicken with no flare up. This is a substantial chicken holder. It is easy to clean. We like it so much we bought more for family. Pricey for sure but we think good value as it will last forever.

Beautifully crafted fantastic Chicken Roaster
I have used this two times and it has made juicy perfect chicken with a crispy golden brown skin. The pan allows the chicken juices to drip down on any vegetables you have placed on the tray giving them a great flavor. It is a good looking product with your typical Staub high quality.

I'd become quite disappointed with the taste
I've already used this several times. I'd become quite disappointed with the taste, or lack thereof, of the chickens I can buy at the local grocery. Now I can season a bird, use the roaster, and end up with a chicken that has some of the taste I remember from chickens of years ago. The chicken comes out very moist, but it doesn't have to sit in juices that I've become suspect of even though I wash the chicken. The skins is great, and yeah, guess I shouldn't eat it....but it really tastes good now. Use a little garlic powder, maybe some Old Bay seasoning...great taste again.

Love it
Love it. I start out with oven at 425 for 20 min and then 400 for the rest of the cooking time (another 25-30 min). Nicely browned and crispy skin, juicy inside. It catches all the drippings to make a delicious gravy if you want. Pricey but worth it because it’s so easy.

Standup Chicken
This is a great French (Staub) chicken roaster with plenty of room in the bottom for veggies. Works with 2 kg chickens in my modest convection oven. Need to have rack low, enough room. More stable than the American version using a beer can.
