Organic Cacao Beans from Lemberona Our organic cocoa beans with fruit skin have a bitter, yet fruity flavour irresistible to cocoa fans. The beans’ fruit skin tastes exotic and fruity – a perfect complement to the more bitter flavour of the cocoa beans. The cocoa beans are very crunchy. Origin: We source our organic fairtrade cacao beans from Peru. They are produced there using gentle methods and applying the highest standards. The cocoa beans are sourced from throughout Peru and are gathered by various small farmers´ groups. Thanks to extensive organic and Fairtrade activities, the farmers were able to learn a great deal during the past few years, and many useful projects were realised, such as equipping schools and playgrounds. Harvest: The cocoa fruit’s thick outer skin is carefully halved and the cocoa beans inside are cut out of the fruit together with the skin surrounding them. The bitter compounds are lost during fermentation. The beans then undergo a gentle drying process, during which their brown colour and flavour determining polyphenols develop. As they are not roasted, our raw, cocoa beans are of raw food quality. The beans are sorted by hand with the utmost care several times before being chopped. Product purity: The Cacao beans with skin are pressure treated and controlled in Austria. During the pressure process, the combination of pressure and time ensures that the product is completely free of pests.
