Tojiro DP Damascus 7-inch Hollow Edge Santoku Knife

While the Damascus construction technique, balance, and size are as expected, it was surprisingly ineffective at a simple roast scoring task. It acts as if its dull.

This knife was ready to go after a hand washing and drying. 3 months after receiving it the knife is still as sharp as ever. Excellent kitchen knife for all around use. Worth the cost of the Damascus steel.

Big step up from my Henckel santoku. I've heard a lot of chefs rave about the three layer Tojiro DP. This is the higher grade Tojiro from that one. Awesome so far.

not a bad knife . In this price range are a lot of brands. After trying a lot of brands I prefer Golbal
